Summertime means fruity cocktails and lots of them.

Constantine just hit the Toronto restaurant scene this spring but it’s already a huge hit because of their stellar food and inventive drinks. Located inside the Anndore House on Charles Street, Constantine focuses on Mediterranian cuisine and exotic boozy concoctions. In honour of summer’s arrival, try the Tropicália — A tropical blend of cachaça, a fermented sugarcane spirit popular in Brazil, Orgeat, an orange flower water syrup, passionfruit syrup and lemon-lime juice.

Try this recipe at home:

Ingredients:

1.5 oz Cachaça
.5 oz Orgeat
.25 oz Passionfruit Syrup
.25 oz Branca Menta
.75 oz Lemon Lime Juice

Method:

Add all ingredients to shaker tin
Shake vigorously
Double strain over ice in S.O.F. Glass
Garnish with mint sprig
